These plant-based waffles are perfect for a weekend brunch, top them with fresh berries or fruit, with syrup, or just sprinkle some powdered sugar on top. They can also be served as a light dessert, topped with chocolate sauce or a plant-based caramel sauce and sliced bananas.

You can also make them as part of your meal-prep plan and just reheat them during the week for a quick breakfast.  We used a mini-waffle maker to make smaller waffles, but you can make bigger ones in a regular waffle-maker.

Frequently Asked Questions

Can I use any plant-based milk?

Yes! Almond, soy, oat, or coconut milk all work well.

Why use vinegar in the milk?

Adding vinegar to milk causes the milk’s proteins to curdle and the mixture to thicken and become tangy like buttermilk.

Can I make these in a regular waffle maker?

Absolutely. Cooking time may be slightly longer and yield fewer waffles.

Why shouldn’t I overmix the batter?

Overmixing can lead to dense waffles. Stir just until combined.
